About

The Bellini is the quintessential Italian aperitivo — a two-ingredient masterpiece of peach purée and Prosecco invented in 1948 by Giuseppe Cipriani at Harry's Bar in Venice, reportedly inspired by the soft pink hue in a painting by the 15th-century Venetian master Giovanni Bellini. Light, delicate, and bracingly fruity, it's the cocktail that defines leisurely brunch culture across Europe and has become the go-to celebration drink at everything from baby showers to bachelorette parties. The secret is using ripe, fresh white peaches for the purée — the result is a drink of pure summer elegance that requires no bartending skill whatsoever, just beautiful ingredients.

Ingredients

1 slice Peach
4 oz Prosecco

Instructions

  1. Prepare the peach purée: blend fresh ripe white peaches until smooth (or use store-bought peach purée).
  2. Pour 2 oz of peach purée into a chilled Champagne flute.
  3. Slowly top with 4 oz of chilled Prosecco, pouring gently to preserve the bubbles.
  4. Stir very gently once or twice to combine.
  5. Garnish with a peach slice on the rim and serve immediately.
