The Kir Royale is French elegance in a flute — Champagne or Crémant transformed by a splash of crème de cassis (blackcurrant liqueur) into a drink that's jewel-red, gently sweet, and eminently festive. The non-sparkling version, Kir, was created by Mayor Félix Kir of Dijon who popularized the local wine-and-cassis combination in the 1950s; replacing wine with Champagne creates the Royale.
