The Kir Royale is French elegance in a flute — Champagne or Crémant transformed by a splash of crème de cassis (blackcurrant liqueur) into a drink that's jewel-red, gently sweet, and eminently festive. The non-sparkling version, Kir, was created by Mayor Félix Kir of Dijon who popularized the local wine-and-cassis combination in the 1950s; replacing wine with Champagne creates the Royale. It's the quintessential aperitif for celebrations, dinner parties, or any moment that deserves a little French flair.

Ingredients

5 oz Champagne

Instructions

  1. Chill a Champagne flute thoroughly before use.
  2. Pour crème de cassis into the bottom of the flute.
  3. Top slowly with well-chilled Champagne, pouring gently down the side of the glass to preserve the bubbles.
  4. Give it one gentle stir if needed to integrate the cassis at the bottom.
  5. Garnish optionally with a fresh blackcurrant or raspberry dropped in.
