The Gold Rush is a honey-sweetened riff on the classic Whiskey Sour — or alternatively, a bourbon-based Bee's Knees — created around 1999 by T.J. Siegal at the iconic Milk & Honey bar in New York City. Just three ingredients: bourbon, fresh lemon juice, and honey syrup. The warmth and vanilla notes of bourbon pair beautifully with the floral sweetness of honey, while lemon juice keeps everything bright and balanced. It's a deceptively simple drink that showcases exactly what great cocktail design looks like: the right spirit, the right sweetener, the right acid, and nothing more. If you have five minutes and good bourbon, you can make one of the best drinks you've ever tasted.

Ingredients

0.75 oz Lemon Juice
1 slice Lemon
0.75 oz Honey Syrup

Instructions

  1. Make honey syrup: combine equal parts honey and warm water, stir to dissolve, and let cool.
  2. Combine bourbon, fresh lemon juice, and honey syrup in a cocktail shaker filled with ice.
  3. Shake vigorously for 12–15 seconds.
  4. Strain into a rocks glass over a large ice cube.
  5. Garnish with a lemon slice or twist and serve.
