What Is a Wipeout?

Blended-rum drinks are the backbone of tiki. Don the Beachcomber and Trader Vic built the Zombie and the Mai Tai on the idea that several rums together taste better than any one alone. The Wipeout applies that logic with a twist: an ounce of overproof dark rum for power, half an ounce of Jamaican rum for funk and half an ounce of blackstrap for depth, then pineapple juice for fruit, half an ounce of cold-brew concentrate for roast, demerara syrup for richness and lemon for lift. PUNCH published the recipe, quoting its creator on how the blackstrap rum enhances the flavor of the other rums rather than leading.

Origin and History

The Wipeout was created by Tyson Buhler for Death & Co. in Denver, part of the cocktail bar group that helped define modern American bartending after opening in New York in 2006. Buhler, a longtime Death & Co. head bartender, is known for drinks that treat tiki formulas with the same precision as stirred classics. The Wipeout's use of cold brew reflects a wider trend of coffee in rum drinks, the same one that drove the revival of the Espresso Martini, but here the coffee is a supporting note rather than the point. The surfing name fits a drink that hits hard and leaves you a little dazed.

Flavor Profile and What to Expect

The first sip is pineapple, bright and frothy. Then the rums arrive together: burnt sugar and oak from the overproof, overripe banana and hogo from the Jamaican, and thick molasses from the blackstrap. The cold brew adds a roasted bitterness that keeps the pineapple from tasting like juice, and the nutmeg on top ties it all together with warm spice. The finish is long and surprisingly dry. It is strong, roughly two ounces of rum with one of them overproof, but the crushed ice dilutes it steadily as you drink. Compared with a Painkiller it is far less sweet and creamy; compared with a Jungle Bird it is roastier and fruitier.

Choosing the Rums

The specified bottles are Plantation O.F.T.D. for the overproof, Smith & Cross for the Jamaican and Cruzan Black Strap for the blackstrap. Substitutes: Lemon Hart 151 or Hamilton 151 for the overproof, Appleton Estate or Wray & Nephew for the Jamaican, and Gosling's Black Seal for the blackstrap. Cold Brew and Syrup

Use a concentrated cold brew, not regular iced coffee, or the drink will be watery. Store-bought concentrate works, or steep coarse grounds in cold water overnight at a one-to-four ratio. Demerara syrup is two parts demerara sugar to one part water; see our simple syrup guide for the method.

Popular Variations

Swap the cold brew for coffee liqueur and cut the syrup for a sweeter, more dessert-like version. Add half an ounce of lime alongside the lemon for extra sharpness. Replace the pineapple juice with orange for a drink closer to a Rum Runner. Skip the overproof and double the Jamaican rum for a gentler build. For a spicier take, add a quarter ounce of falernum. How to Serve It

The whip shake, a brief shake with just a few cubes, chills and aerates without over-diluting, because the crushed ice will do the rest. Ingredients

1/2 oz Lemon Juice
1 1/2 oz Pineapple Juice
1 pinch Nutmeg
1/2 oz Black Rum
1/2 oz Cold Brew
1/2 oz Jamaican Rum

Instructions

  1. Add the pineapple juice, overproof dark rum, Jamaican rum, blackstrap rum, cold brew concentrate, demerara syrup and fresh lemon juice to a shaker.
  2. Add three ice cubes and whip-shake briefly, just until the ice has almost dissolved.
  3. Strain into a highball glass.
  4. Add crushed ice and mix with a swizzle stick or bar spoon, then top with more crushed ice to fill.
  5. Garnish with a pineapple frond and a grating of fresh nutmeg, and serve with a straw.
