The Jungle Bird is a tiki classic that broke the rules of its genre — it uses Campari, one of the most bitter liqueurs in the world, in a drink otherwise built on dark rum and pineapple juice. Created in 1978 at the Aviary Bar of the Kuala Lumpur Hilton for the hotel's grand opening, it was lost to obscurity for decades before being rediscovered and published by Jeff Berry in his 2002 book "Intoxica!" The combination sounds wrong on paper — bitter Campari with sweet pineapple and funky rum — but in practice it's one of the most harmonious, bracingly complex cocktails ever invented. Dark, tropical, bitter-sweet, and deeply satisfying, the Jungle Bird proves that the best flavors in a cocktail are often the unexpected ones.

Ingredients

0.5 oz Lime Juice
0.5 oz Simple Syrup
0.75 oz Campari
1 wedge Pineapple
1.5 oz Black Rum

Instructions

  1. Combine black rum, Campari, pineapple juice, fresh lime juice, and simple syrup in a cocktail shaker filled with ice.
  2. Shake vigorously for 15 seconds.
  3. Strain into a rocks glass or tiki mug filled with crushed ice.
  4. Garnish with a pineapple wedge and serve with a straw.
