About

The Penicillin is widely regarded as the most successful cocktail created in the 21st century — invented by bartender Sam Ross at the legendary Milk & Honey bar in New York City in 2005. Built on blended Scotch whisky with a float of peaty Islay Scotch, honey-ginger syrup, and fresh lemon juice, it's a masterclass in balance: smoky and earthy, sweet and spicy, tart and warming all at once. Named with a wink at the idea that good Scotch is medicine, it has the complexity of a decades-old classic despite being barely 20 years old. The floating Islay Scotch delivers the peaty, maritime aroma on first approach before you taste the layered body beneath — an unforgettable drinking experience.

Ingredients

0.75 oz Lemon Juice
0.5 oz Honey Syrup
0.25 oz Ginger Syrup
1 piece(s) Candied Ginger
0.25 oz Islay Scotch

Instructions

  1. Combine blended Scotch whisky, fresh lemon juice, honey syrup, and ginger syrup in a cocktail shaker filled with ice.
  2. Shake vigorously for 12–15 seconds.
  3. Strain into a rocks glass over a large ice cube.
  4. Float the Islay Scotch on top by pouring it gently over the back of a bar spoon.
  5. Garnish with a piece of candied ginger on a cocktail pick.
  6. Serve immediately — note the smoky aroma on the first sip.
