The Clover Club is a pre-Prohibition gin sour with a history that stretches back to the late 19th century, when it was the signature drink of the Clover Club — a prestigious Philadelphia men's literary society that met at the Bellevue-Stratford Hotel. A delicate blend of gin, fresh lemon juice, raspberry syrup, and egg white, it's a pink, frothy, beautiful cocktail that delivers far more complexity than its pretty appearance suggests. Perfectly balanced between tartness, sweetness, and the botanical depth of gin, it essentially defined the template for the modern sour. Long overshadowed by the Cosmopolitan for pink cocktail supremacy, it was rediscovered by the craft cocktail movement in the 2000s and is now recognized as the refined, sophisticated classic it always was.

Ingredients

0.75 oz Lemon Juice
2 oz Gin
0.75 oz Raspberry Syrup
3 piece(s) Raspberry
1 oz Egg White

Instructions

  1. Combine gin, fresh lemon juice, raspberry syrup, and egg white in a cocktail shaker without ice.
  2. Dry shake vigorously for 15 seconds to emulsify the egg white.
  3. Add ice and shake again for 15 seconds.
  4. Double-strain into a chilled coupe glass.
  5. Garnish with a few fresh raspberries on a pick and serve immediately.
