About

The Bee's Knees is a Prohibition-era gem that emerged in the 1920s when bartenders used honey and lemon juice to mask the rough taste of bathtub gin — the name itself was 1920s slang for "the best thing there is." Made with gin, fresh lemon juice, and honey syrup, it's a bright, balanced sour with a silky texture and a floral sweetness that makes it infinitely drinkable. Its simple three-ingredient formula is deceptively elegant, and it has enjoyed a major revival with the craft cocktail movement. Serve it ice-cold in a coupe and it will convert any skeptic into a gin believer.

Ingredients

0.75 oz Lemon Juice
2 oz Gin
1 slice Lemon
0.75 oz Honey Syrup

Instructions

  1. Combine gin, fresh lemon juice, and honey syrup in a cocktail shaker filled with ice.
  2. Shake vigorously for 12–15 seconds until well chilled.
  3. Double-strain into a chilled coupe glass.
  4. Garnish with a lemon twist and serve immediately.
