The Fourth Regiment is a 19th century Manhattan variation named after a Civil War regiment, distinguished by something almost no other stirred cocktail attempts: four different types of bitters. Orange bitters, Angostura bitters, celery bitters, and Peychaud's each bring a different dimension to equal parts rye and sweet vermouth — citrus, spice, vegetal savory, and cherry-rose respectively. The celery bitters in particular give it a mineral, almost savory quality that makes it unlike anything else in the stirred cocktail canon. It's the most complex old-fashioned Manhattan variation you've never heard of, and it richly deserves rediscovery.

Ingredients

1.5 oz Rye Whiskey

Instructions

  1. Combine rye whiskey, sweet vermouth, orange bitters, Angostura bitters, celery bitters, and Peychaud's bitters in a mixing glass filled with ice.
  2. Stir for 30 seconds until well chilled and diluted.
  3. Strain into a chilled coupe or Nick & Nora glass.
  4. Garnish with a lemon twist or maraschino cherry.
