About

The Fernetti Biscotti is a complex, multi-layered shaken sour that brings together bourbon, Fernet-Branca, Biscotti Liqueur, lemon juice, orgeat, and egg white in a cocktail of remarkable sophistication. The name blends Fernet (the bitter Italian amaro) with Faretti (the Biscotti Liqueur brand) — a portmanteau that captures the dual identity of a drink that is simultaneously bitter, sweet, sour, and silky.

Why Every Ingredient Matters

The Fernetti Biscotti requires all six components: bourbon provides spirit backbone and caramel-vanilla sweetness; Fernet-Branca provides bitterness and herbal complexity; biscotti liqueur provides almond-pastry warmth that bridges the bourbon and Fernet; lemon provides acidity that defines it as a proper sour; orgeat provides silky almond sweetness that echoes the biscotti liqueur; and egg white provides foam that softens and unifies everything. Remove any one ingredient and the cocktail loses its distinctive equilibrium. The recipe appeared on Scrappy's Bitters' cocktail collection. See the full Biscotti Liqueur collection and the Amaretto Sour for the simpler almond-sour archetype this drink builds upon.

The Dry Shake Technique

For maximum foam, use the dry shake: shake all ingredients without ice for 15 seconds first, then add ice and shake again for 15 more seconds. Strain into a chilled coupe and let the foam settle into a smooth white cap. For more on egg white technique, Liquor.com's whiskey sour guide covers the dry shake method in detail. See MixDrinkEnjoy's cocktail techniques guide for shaking and sour construction. The Biscotti Manhattan, Boulevardier, and Old Fashioned offer stirred, spirit-forward counterparts for the same bold-flavors occasion.
