The Hugo is the drink that quietly conquered European summer — a light, floral, effervescent cocktail of elderflower liqueur, Prosecco, soda water, fresh mint, and lime that has become the Italian aperitivo scene's answer to the Aperol Spritz. Created around 2005 by Roland Gruber at a bar in South Tyrol, Italy, the Hugo (named after a local nickname for Gruber's bar) has spread from the Alpine foothills across Europe and beyond, becoming the go-to warm weather drink for anyone who finds the Spritz a bit too bitter. Pale, delicate, and impossibly refreshing, it's low in alcohol, gorgeous in a large wine glass, and tastes exactly like a late-spring afternoon should. The mint and lime keep it bright; the elderflower makes it floral and dreamy.

Ingredients

1 wedge Lime
2 sprig Mint
1 splash Soda Water
4 oz Prosecco

Instructions

  1. Fill a large wine glass or balloon glass with ice.
  2. Add the elderflower liqueur.
  3. Pour in the chilled Prosecco.
  4. Add a splash of soda water.
  5. Add fresh mint sprigs and squeeze in a lime wedge, dropping it in.
  6. Stir very gently once to combine.
  7. Serve immediately — the Hugo waits for no one.
