About

The Suissesse is a creamy, dreamy New Orleans classic that softens absinthe's fierce personality with anisette, egg white, heavy cream, and orgeat syrup. The result is a silky, frothy cocktail with a gentle sweetness and subtle almond note that makes it one of the most approachable and indulgent ways to enjoy absinthe. A perfect brunch or after-dinner drink.

Ingredients

1.5 oz Absinthe
0.5 oz Heavy Cream
0.5 oz Egg White
0.5 oz Anisette

Instructions

  1. Combine the absinthe, anisette, egg white, heavy cream, and orgeat in a shaker without ice.
  2. Dry shake vigorously for 20 seconds to emulsify the egg white and cream.
  3. Add ice and shake again for 15 seconds.
  4. Double strain into a chilled coupe glass.
  5. No garnish needed — the frothy white foam is the presentation.
