The Ramos Gin Fizz is a legendary New Orleans cocktail created in 1888 by Henry Charles Ramos at his Imperial Cabinet Saloon. Rich, frothy, and ethereally creamy, it blends gin with heavy cream, citrus juices, egg white, simple syrup, and a few drops of orange flower water, then gets topped with soda water to produce its signature billowy foam. Ramos became so famous for this drink that during Mardi Gras 1915 he reportedly employed 35 bartenders working in shifts just to shake enough orders — the original recipe called for a full 12-minute shake per drink. Silky and floral with a gentle citrus brightness, the Ramos Gin Fizz is one of the great showpieces of American cocktail history.

Ingredients

0.5 oz Lemon Juice
2 oz Gin
0.5 oz Lime Juice
0.5 oz Simple Syrup
1 whole Egg White
2 oz Club Soda

Instructions

  1. Combine gin, heavy cream, lemon juice, lime juice, simple syrup, egg white, and orange flower water in a cocktail shaker without ice.
  2. Dry shake vigorously for 1–2 minutes to emulsify the egg white and cream into a thick foam.
  3. Add ice and continue shaking hard for at least 5 minutes (the longer you shake, the silkier and frothier the drink becomes).
  4. Strain into a tall chilled Collins or highball glass with no ice.
  5. Slowly pour the club soda down the side of the glass — this lifts the foam and creates the drink's iconic billowing white head.
  6. Serve immediately, ideally with a straw so the soda passes through the froth.
