Neptune's Wrath is a fierce and formidable cocktail that fuses dry gin and absinthe with fresh lemon juice, simple syrup, egg white foam, and a float of Green Chartreuse. Last Word-like in its structure but wilder in character, the absinthe and Chartreuse create a deep herbal intensity that the silky egg white foam barely manages to contain.
Ingredients
0.75 oz Lemon Juice
0.5 oz Simple Syrup
0.5 oz Absinthe
1.5 oz Dry Gin
0.5 oz Egg White
0.5 oz Green Chartreuse
Instructions
- Combine the gin, absinthe, lemon juice, simple syrup, and egg white in a shaker without ice.
- Dry shake vigorously for 15 seconds.
- Add ice and shake again for 15 seconds.
- Double strain into a chilled coupe glass.
- Float the Green Chartreuse by gently pouring it over the back of a spoon onto the foam.
