The Haystack is a bourbon sour variation from Difford's Guide that takes the classic template and gives it a distinctly European twist: Suze — the French gentian-based aperitif with its bitter, earthy intensity — replaces part of the usual sweetener, while apricot brandy contributes stone fruit richness and a honey-like sweetness that counterbalances the Suze's bitterness. The result is a cocktail that's simultaneously tart from the lemon, bittersweet from the Suze, fruity from the apricot, and warm from the bourbon — four different flavors that somehow stack into something harmonious and complex. It drinks like a Whiskey Sour that studied in Paris.

Ingredients

0.75 oz Lemon Juice
0.5 oz Suze

Instructions

  1. Combine bourbon, Suze, apricot brandy, and fresh lemon juice in a cocktail shaker filled with ice.
  2. Shake vigorously for 10-12 seconds until well chilled.
  3. Strain into a chilled coupe or cocktail glass.
  4. Garnish with a lemon twist or a slice of dried apricot on the rim.
