The Dark and Stormy is Bermuda's national cocktail — a two-ingredient classic of dark rum and ginger beer that's as straightforward as it is satisfying. Protected by Gosling's rum (which trademarked the drink name in 1991 and insists their Black Seal rum is the only authentic version), it's also one of the few cocktails to have a legal definition. The name evokes exactly what it looks like: dark rum poured over pale ginger beer creates a dramatic cloud, like a storm gathering on a summer afternoon. A squeeze of lime juice adds citrus brightness, and the result is a bold, spicy, refreshing drink that punches well above its simplicity.
