The Vieille Place (French for 'old place') is a multi-spirit stirred cocktail from Difford's Guide that layers bourbon, Cognac, Suze, dry vermouth, and amaretto with two types of bitters into a remarkably complex spirit-forward drink. Each ingredient earns its place: the bourbon-Cognac split provides a richly varied whiskey-grape base; Suze adds bitter gentian depth; dry vermouth contributes dryness; amaretto rounds the edges with almond sweetness. The result is reminiscent of a sophisticated Old Fashioned but with the option to enjoy it as an aperitif — nuanced, aromatic, and eminently sippable.

Ingredients

0.5 oz Dry Vermouth
0.25 oz Simple Syrup
0.5 oz Cognac
0.5 oz Suze

Instructions

  1. Combine bourbon, Cognac, Suze, dry vermouth, amaretto, simple syrup, Peychaud's bitters, and Angostura bitters in a mixing glass filled with ice.
  2. Stir for 30 seconds until well chilled.
  3. Strain over a large ice cube into a rocks glass.
  4. Garnish with an orange twist, expressing the oils over the surface.
