The Vieille Place, French for "old square," is a modern riff on the classic Vieux Carre created by bartender Robbie Neskens at Bruut in Hasselt, Belgium. Where the original leans on rye and cognac alone, this version adds a bittersweet gentian liqueur and a touch of amaretto for extra complexity, stirred down and served over a large ice cube. It's a boozy, herbal sipper for fans of the French Quarter classic looking for a twist.

Ingredients

0.75 oz Bourbon Whiskey
0.25 oz Dry Vermouth
0.25 oz Simple Syrup
0.75 oz Cognac
0.25 oz Suze

Instructions

Combine all ingredients in a mixing glass with ice. Stir until well chilled and strain into a chilled rocks glass over a large ice cube. Express a lemon twist over the drink and use as garnish.
