The Queen's Park Swizzle hails from Trinidad's Queen's Park Hotel and is one of the defining drinks of Caribbean rum culture. Fresh mint is muddled into rich simple syrup, lime juice and demerara rum are added, and the whole thing is swizzled over crushed ice until frost forms on the outside of the glass. A few dashes of Angostura bitters float on top for aroma. It's cold, herbaceous, and deceptively strong.

Ingredients

2 oz Dark Rum
1 oz Lime Juice
0.75 oz Simple Syrup

Instructions

Gently muddle the mint leaves with the simple syrup in a Collins glass. Add the lime juice and rum, then fill with crushed ice. Swizzle with a barspoon, twirling it between your palms, until the outside of the glass frosts over. Top with the Angostura bitters and garnish with a fresh mint sprig.
