The Caipirinha is Brazil's national cocktail and one of the world's most beloved drinks — cachaça (Brazil's indigenous sugar cane spirit), fresh lime, and sugar muddled and served over crushed ice in a simple, rustic style that couldn't be further from the fussiness of high-end cocktail culture. Pronounced kai-pee-REEN-ya, it's been the drink of choice across Brazil for generations. The key is fresh lime and good cachaça: the spirit's funky, grassy character is completely different from rum, making this an experience that can't be replicated with substitutes.

Ingredients

4 wedge Lime
2 oz Cachaça
2 TSP White Sugar

Instructions

  1. Cut a lime into 8 wedges, remove the white pith from the center (it causes bitterness), and place them in a sturdy rocks glass or Old Fashioned glass.
  2. Add white sugar and muddle firmly until the lime juice is fully expressed and the sugar has dissolved.
  3. Fill the glass with crushed ice or ice cubes.
  4. Pour in cachaça and stir well to combine everything.
  5. Serve as-is, without straining — the lime wedges stay in the glass.
