The Absinthe Drip is the original, ceremonial way to drink absinthe — the French method that dates back to 19th-century Parisian cafés. A measure of absinthe is placed in a glass, a slotted spoon bearing a sugar cube is laid across the rim, and ice-cold water is dripped slowly over the sugar until the drink louches into a milky, opalescent green. The ritual is as much the point as the drink itself.
Instructions
- Pour the absinthe into an old-fashioned glass.
- Rest a slotted absinthe spoon across the rim and place a sugar cube on the spoon.
- Very slowly drip the ice-cold water over the sugar cube until it dissolves into the glass.
- The absinthe will louche — turning from clear green to milky opalescent — as the water is added.
- Stir gently and serve immediately.
